These kabobs are easy to make and perfect for any grilling occasion!
INGREDIENTS
1.5 lbs boneless, skinless chicken breasts (or thighs), cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
1 large yellow bell pepper, cut into 1-inch pieces
1 large green bell pepper, cut into 1-inch pieces
1 large red onion, cut into 1-inch pieces
3 tablespoons olive oil
2-3 tablespoons Ranch & Rifle’s The A.P. Seasoning
Wooden or metal skewers
Instructions
Step 1: Prepare the Chicken and Vegetables
Season the chicken: Place the chicken pieces in a bowl, drizzle with olive oil, and add Ranch & Rifle’s The A.P. Seasoning. Toss until the chicken is evenly coated. For maximum flavor, let the chicken marinate in the seasoning for 15-30 minutes in the fridge.
Prep the vegetables: In a separate bowl, toss the bell peppers and onion pieces with a little olive oil and a light sprinkle of The A.P. Seasoning.
Step 2: Assemble the Kabobs
Skewer: Thread the chicken, bell peppers, and onions alternately onto skewers, leaving a bit of space between each piece to ensure even cooking. Aim for about 4-5 pieces of chicken per skewer, with peppers and onions in between each piece.
Step 3: Preheat the Grill
Preheat your grill to medium-high heat (around 400°F).
Oil the grates lightly to prevent sticking.
Step 4: Grill the Kabobs
Place the kabobs directly on the preheated grill grates.
Grill for 10-12 minutes, turning every 2-3 minutes to cook each side evenly. The chicken should be cooked to an internal temperature of 165°F and the vegetables should be tender with a slight char.
Step 5: Serve
Once cooked, remove the kabobs from the grill and let them rest for a few minutes.
Serve the kabobs with a side of rice, a light salad, or your favorite dipping sauce for added flavor.
Tips and Serving Suggestions
Dipping sauce: Ranch, garlic aioli, or a smoky barbecue sauce pairs well with these kabobs.
Side options: Serve with grilled pita bread, couscous, or a refreshing cucumber salad.
Skewers: If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
These kabobs make a crowd-pleasing meal with their bold flavor, colorful presentation, and delicious Ranch & Rifle's The A.P. seasoning. Enjoy!
