The BBQ Rub: BBQ Chicken Tostadas

EQUIPMENT

  • Crockpot

  • Oven

  • Baking Sheet

  • Mixing Bowl

INGREDIENTS

  • 4 boneless skinless chicken thighs

    -1 ½ cups BBQ sauce

    -Ranch & Rifle BBQ Rub, to taste

    -1/2 cup Chicken Broth

    -6 Tostada shells

    -1/2 cup Monterey Jack Cheese

    -1/2 cup Mozzarella Cheese

    -Salt, pepper, garlic to taste

    -Cilantro and Lime to garnish

INSTRUCTIONS

  • Place the chicken, chicken broth, seasoning, and ½ cup of BBQ sauce into your crockpot for 6.5 hours on low.

  • Preheat the oven to 350 degrees.

    In a small bowl, shred chicken and add remaining BBQ sauce.

  • Place 6 tostada shells onto a baking sheet and then place shredded chicken on top of the shell.

  • Next, spread both the Monterey and Mozzarella cheese on top.

  • Bake in the oven for approx. 8-10 minutes and then broil until golden brown.

  • Drizzle a little more BBQ sauce on top, then garnish with cilantro and lime juice.
