Gunpowder & Chimi - The NY Strip

Here’s a recipe for grilling NY Strip steaks on a charcoal grill, using Ranch & Rifle’s Gunpowder seasoning to bring out the beef’s natural flavors, and topping it with a bright, tangy chimichurri for a perfect finish.

Ingredients:

For the Chimichurri:

  • 1/2 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped (optional)

  • 3 cloves garlic, minced

  • 1/4 cup red wine vinegar

  • 1/2 cup extra-virgin olive oil

  • 1/2 tsp crushed red pepper flakes (adjust to taste)

  • Salt and black pepper, to taste

Instructions:

  1. Season the Steaks: Pat the steaks dry with paper towels, then rub them with olive oil. Sprinkle Gunpowder seasoning on both sides of each steak, pressing it into the meat for even coverage. Let the steaks rest while you prepare the grill.

  2. Prepare the Chimichurri: In a bowl, combine the parsley, cilantro (if using), minced garlic, red wine vinegar, and red pepper flakes. Stir to combine, then slowly drizzle in the olive oil while stirring. Add salt and black pepper to taste. Set aside to let the flavors meld.

  3. Set Up the Charcoal Grill: Light the charcoal and let it burn until the coals are covered in gray ash. Spread the coals in an even layer, then set up your grill for direct high heat (around 450-500°F).

  4. Grill the Steaks: Place the steaks directly over the hot coals. For medium-rare, grill for about 4-5 minutes per side, or until the internal temperature reaches 130-135°F. For medium, grill 6-7 minutes per side, or until the temperature reaches 140-145°F. Flip only once to get a good sear on each side.

  5. Rest the Steaks: Remove the steaks from the grill and let them rest for 5 minutes. This allows the juices to redistribute for a tender, juicy bite.

  6. Serve with Chimichurri: Slice the steak against the grain, then spoon a generous amount of chimichurri over the top. Serve immediately with extra chimichurri on the side.
