Cast Iron Omelets

A country-style omelet is all about hearty flavors, simple ingredients, and a little bit of that crispy edge you get from cooking in cast iron. This recipe is loaded with all the good stuff – eggs, veggies, and a bit of cheese – for a breakfast that’ll keep you going all morning.

Ingredients

  • 3 large eggs

  • 2 tbsp milk or cream (optional, for fluffier eggs)

  • Salt and black pepper, to taste

  • 1 tbsp butter

  • ¼ cup diced onion

  • ¼ cup diced bell pepper (any color you like)

  • ¼ cup diced ham or cooked sausage (optional, but delicious)

  • ¼ cup shredded cheese (cheddar, Swiss, or your favorite)

Instructions

  1. Heat the skillet: Place your cast iron skillet over medium heat and let it warm up. Add the butter and let it melt, swirling to coat the bottom of the skillet.

  2. Cook the veggies: Add the diced onion and bell pepper to the skillet. Sauté for 3-4 minutes, until they’re soft and just starting to brown. If you’re adding ham or sausage, toss it in with the veggies and cook until everything is warmed through. Transfer the mixture to a plate and set aside.

  3. Whisk the eggs: In a bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.

  4. Pour and cook: Lower the heat slightly, then pour the egg mixture into the skillet. Let it cook for a minute, just until the edges start to set.

  5. Add the fillings: Sprinkle the veggie and meat mixture over one half of the eggs, then add the shredded cheese on top. Let the eggs cook for another 1-2 minutes, until they’re mostly set but still a bit soft on top.

  6. Fold and finish: Carefully fold the empty half of the omelet over the filling. Let it cook for another minute to melt the cheese and finish setting the eggs.

  7. Serve it up: Slide the omelet onto a plate, cut in half if you’re sharing, optionally top with sour cream and/or hot sauce, and serve with a side of toast or hash browns.

Tips

  • Want extra flavor? Add a sprinkle of herbs like chives, parsley, or thyme to the eggs.
