BBQ’d Turkey
Roasting a spatchcock turkey on a pellet grill is an excellent way to get juicy, evenly cooked meat with a delicious smoky flavor. Ranch & Rifle's BBQ Rub adds a perfect blend of spices for a savory and slightly sweet crust. Here’s how to do it!
Ingredients:
12-14 lb whole turkey, spatchcocked (backbone removed, flattened)
3 tbsp olive oil or melted butter
1/4 cup Ranch & Rifle BBQ Rub
Fresh herbs (optional, for garnish: rosemary, thyme)
Instructions:
Prep the Turkey: Remove the turkey’s backbone using kitchen shears or a sharp knife. Press down firmly on the breastbone to flatten the bird. Pat the turkey dry with paper towels to help the skin crisp up.
Season: Rub olive oil or melted butter all over the turkey, getting it under the skin where possible. Generously coat the entire turkey with Ranch & Rifle’s BBQ Rub, making sure to cover both the skin and under the wings and legs.
Preheat the Pellet Grill: Set your pellet grill to 325°F with your preferred wood pellets. Hickory, applewood, or pecan pellets work great with turkey. Allow the grill to preheat fully.
Grill the Turkey: Place the turkey breast-side up on the grill, with the wings and legs spread out. Close the lid and let it cook for 1.5 to 2.5 hours, or until the internal temperature reaches 165°F in the thickest part of the breast and 175°F in the thigh.
Check and Baste: Every 45 minutes, baste the turkey with any juices collecting in the pan or brush with extra melted butter to keep it moist.
Rest the Turkey: Once the turkey reaches the right temperature, remove it from the grill. Tent it with foil and let it rest for 15-20 minutes to allow the juices to redistribute.
