    Step 1: Prepare the Batter

    1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

    2. In a separate bowl, combine the buttermilk, milk, egg, and melted butter, whisking until smooth.

    3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter should be a bit lumpy to keep the pancakes light and fluffy. Avoid over-mixing, as this can make the pancakes tough.

  2. Step 2: Preheat the Griddle

    1. Preheat your Blackstone Griddle to medium-low heat (about 325°F to 350°F). Use an infrared thermometer if you have one, as griddle temperatures can vary.
