Smoked, Candied Nuts

EQUIPMENT

  • Traeger grill (or any pellet smoker)

  • Wood pellets (e.g., hickory, apple, or pecan for a complementary smoke flavor)

  • Mixing bowl

  • Baking sheet

  • Parchment paper or silicone baking mat

  • Spatula

INGREDIENTS

  • 1 cup pecans

  • 1 cup walnuts

  • 1 cup almonds

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 tablespoon cinnamon

  • 1/4 teaspoon salt

  • 1/4 teaspoon cayenne pepper (optional, for a spicy kick)

  • 1 egg white

  • 1 tablespoon water

  • 1 teaspoon vanilla extract

INSTRUCTIONS

  • Preparation:

    • Preheat your Traeger grill to 250°F (121°C) using your preferred wood pellets.

  • Preparing the Nuts:

    • In a large mixing bowl, combine the pecans, walnuts, and almonds.

  • Making the Coating:

    • In a separate bowl, whisk together the egg white, water, and vanilla extract until frothy.

    • Pour the egg white mixture over the nuts and toss until the nuts are evenly coated.

  • Adding the Seasoning:

    • In another bowl, mix together the granulated sugar, brown sugar, cinnamon, salt, and cayenne pepper (if using).

    • Sprinkle the sugar mixture over the coated nuts and toss well to ensure all nuts are evenly coated with the sugar and spice mixture.

  • Preparing for Smoking:

    • Line a baking sheet with parchment paper or a silicone baking mat.

    • Spread the coated nuts in an even layer on the prepared baking sheet.

  • Smoking the Nuts:

    • Place the baking sheet with the nuts on the preheated Traeger grill.

    • Smoke the nuts for 1 hour, stirring every 15 minutes to ensure even cooking and coating.

  • Finishing Touches:

    • After 1 hour, check the nuts. They should be dry to the touch and caramelized.

    • Remove the nuts from the grill and let them cool completely on the baking sheet. They will continue to harden as they cool.

  • Serving:

    • Once completely cool, break up any clusters of nuts.

    • Serve immediately or store in an airtight container for up to two weeks.

  • Tips:

    • Even Coating: Ensure that the nuts are evenly coated with the egg white mixture to help the sugar and spices stick properly.

    • Stirring: Regular stirring during smoking is crucial to prevent burning and to ensure all nuts are evenly smoked and caramelized.

    • Storage: For longer freshness, store the candied nuts in a cool, dry place in an airtight container.
