Loaded BBQ Potatoes
These BBQ-loaded baked potatoes are cooked to perfection on a pellet grill, infusing them with a smoky flavor that complements the creamy potato and savory toppings. Seasoned with Ranch & Rifle's BBQ Rub, these loaded potatoes are hearty, flavorful, and perfect for a backyard BBQ or game day meal.
Ingredients
Large Russet Potatoes: 4, scrubbed clean
Olive Oil: 2 tbsp
Ranch & Rifle's BBQ Rub: 2-3 tbsp, divided
Butter: 4 tbsp
Shredded Cheddar Cheese: 1 cup
BBQ Pulled Pork: 1 cup (or substitute with BBQ Chicken or Chopped Brisket if preferred)
Sour Cream: ½ cup
Chopped Green Onions: ¼ cup (for garnish)
Crumbled Bacon: ¼ cup (optional, for extra flavor)
BBQ Sauce: for drizzling
Instructions
Preheat the Pellet Grill
Set your pellet grill to 375°F and preheat for 10-15 minutes with the lid closed. Use a wood pellet like hickory, apple, or cherry for added smoky flavor.
Prepare the Potatoes
Rub each potato with olive oil, then sprinkle with 1 tbsp of Ranch & Rifle's BBQ Rub, making sure each potato is well-coated.
Prick each potato a few times with a fork to allow steam to escape.
Wrap each potato individually in aluminum foil.
Smoke the Potatoes
Place the potatoes directly on the pellet grill grates.
Close the lid and smoke for 1 to 1.5hours until the potatoes are tender, and a fork easily pierces through the center.
After about an hour, you can rotate the potatoes for even cooking if needed.
Assemble the BBQ Loaded Potatoes
Once cooked, carefully remove the potatoes from the grill and foil.
Slice each potato lengthwise and gently squeeze the ends to open it up.
Add 1 tbsp of butter to the center of each potato and sprinkle with a pinch of Ranch & Rifle's BBQ Rub for added flavor.
Add the Toppings
Top each potato with shredded cheddar cheese, then add a generous portion of pulled pork.
Drizzle with BBQ sauce, then add a dollop of sour cream.
Garnish with chopped green onions, crumbled bacon (if using), and another light sprinkle of Ranch & Rifle’s BBQ Rub for an extra kick.
