RBJ - Chicken Bacon Ranch Skillet

This hearty Chicken Bacon Skillet recipe combines tender chicken, smoky bacon, and flavorful black beans with a kick from Ranch & Rifle's RBJ (Ranch, Bacon, Jalapeño) Rub. Cooked in a cast iron skillet, this dish develops a deep, savory flavor and is topped with a dollop of sour cream and fresh parsley for a creamy, fresh finish.

Ingredients

  • Rotisserie Chicken: 2 cups, shredded

  • Bacon: 4 slices, chopped

  • Olive Oil: 1 tbsp

  • Onion: 1 small, diced

  • Red Bell Pepper: 1, diced

  • Black Beans: 1 can (15 oz), drained and rinsed

  • Ranch & Rifle’s RBJ Rub (Ranch, Bacon, Jalapeño): 1-2 tbsp, to taste

  • Shredded Cheddar Cheese: 1 cup

  • Sour Cream: ½ cup, for topping

  • Fresh Parsley: chopped, for garnish

  • Green Onions: sliced, for garnish (optional)

Instructions

  1. Cook the Bacon

    • In a large cast iron skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.

    • Use a slotted spoon to remove the bacon from the skillet and set it aside on a paper towel-lined plate. Leave 1-2 tablespoons of the bacon drippings in the skillet; if necessary, add a bit of olive oil.

  2. Sauté the Vegetables

    • Add the diced onion and red bell pepper to the skillet and cook in the bacon drippings over medium heat until softened, about 5 minutes.

    • Stir in the drained black beans and corn, cooking for another 2-3 minutes until everything is heated through.

  3. Add the Chicken and Seasoning

    • Add the shredded rotisserie chicken to the skillet, mixing it in with the other ingredients.

    • Sprinkle Ranch & Rifle’s RBJ Rub over the mixture and stir well, allowing the flavors to blend as the chicken heats through, about 3-4 minutes.

  4. Add the Bacon and Cheese

    • Return the cooked bacon to the skillet, stirring to incorporate it throughout.

    • Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet and let it sit for 2-3 minutes or until the cheese is melted.

  5. Serve and Garnish

    • Remove the skillet from heat. Top each serving with a generous dollop of sour cream and a sprinkle of fresh parsley. Optionally, add sliced green onions for extra flavor and color.

  6. Enjoy

    • Serve the skillet dish directly from the pan for a rustic presentation, and enjoy immediately while warm.

Tips

  • Adjust Heat: Add extra RBJ rub or a few slices of fresh jalapeño if you want more spice.

  • Make it a Wrap: Spoon this skillet mix into tortillas for a quick and delicious wrap or burrito.

  • Serving Suggestions: Serve with tortilla chips or over rice to make it even more filling.

This Chicken Bacon Skillet is a quick, hearty meal packed with flavor, perfect for busy nights or casual gatherings!
