RBJ - Chicken Bacon Ranch Skillet

Ingredients
Rotisserie Chicken: 2 cups, shredded
Bacon: 4 slices, chopped
Olive Oil: 1 tbsp
Onion: 1 small, diced
Red Bell Pepper: 1, diced
Black Beans: 1 can (15 oz), drained and rinsed
Ranch & Rifle’s RBJ Rub (Ranch, Bacon, Jalapeño): 1-2 tbsp, to taste
Shredded Cheddar Cheese: 1 cup
Sour Cream: ½ cup, for topping
Fresh Parsley: chopped, for garnish
Green Onions: sliced, for garnish (optional)
Instructions
Cook the Bacon
In a large cast iron skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.
Use a slotted spoon to remove the bacon from the skillet and set it aside on a paper towel-lined plate. Leave 1-2 tablespoons of the bacon drippings in the skillet; if necessary, add a bit of olive oil.
Sauté the Vegetables
Add the diced onion and red bell pepper to the skillet and cook in the bacon drippings over medium heat until softened, about 5 minutes.
Stir in the drained black beans and corn, cooking for another 2-3 minutes until everything is heated through.
