The A.P. - Grilled Acorn Squash

INGREDIENTS

  • 2 medium acorn squashes

  • 2 tablespoons olive oil

  • 3 tablespoons The A.P. spice rub

  • Fresh parsley or cilantro for garnish (optional)

  • 2 tablespoons butter (optional, for finishing)

INSTRUCTIONS

  • Preparation:

    • Set up your Big Green Egg for indirect grilling and preheat it to 400°F (204°C).

  • Preparing the Squash:

    • Wash and dry the acorn squashes.

    • Cut each squash in half from stem to tip.

    • Scoop out the seeds and stringy pulp with a spoon.

  • Seasoning:

    • In a small bowl, mix The A.P. spice rub with the brown sugar if using.

    • Brush the squash bowls with olive oil on all sides.

    • Sprinkle the spice rub mixture evenly over the squash, ensuring each is well coated.

  • Grilling the Squash:

    • Place the squash directly on the grill grate, cut side down.

    • Grill for about 7-10 minutes per side, or until the squash is tender and has nice grill marks. Close the lid while grilling to maintain a steady temperature.

    • If you prefer a softer texture, you can wrap the seasoned squash bowls in aluminum foil and grill for 15-20 minutes, turning once halfway through.

    • If using, melt butter and brush it over the grilled squash for added richness.

    • Garnish with fresh chopped parsley or cilantro for a pop of color and freshness.

  • Serving:

    • Transfer the grilled squash to a serving platter.

    • Indirect Cooking: If you prefer a more tender texture, consider using the indirect cooking method by placing a heat deflector or baking stone in the Egg and grilling the squash on a perforated grill pan.

    • Flavor Variations: Add a touch of maple syrup or honey during the last few minutes of grilling for a caramelized finish.

    • Checking Doneness: Use a fork to check the tenderness of the squash. It should easily pierce the flesh but still hold its shape.
