The A.P. : Grilled Zucchini
EQUIPMENT
Charcoal Grill
Sharp Pearing knife

INGREDIENTS
4 Medium Zucchinis
2 tbsp Olive Oil
3 tbsp Ranch & Rifle’s The A.P. Seasoning
1 tsp sea salt
3 Fresh Lemon Wedges
INSTRUCTIONS
Preheat the Grill:
Preheat your grill to medium-high heat (around 425-450°F).
Prepare the Zucchini:
Wash the zucchinis thoroughly and pat them dry with a clean towel.
Slice the zucchinis lengthwise into halves.
Score the Zucchini:
Take a sharp knife and make diagonal cuts on the flesh side of each zucchini half, about 1/4 inch deep. Be careful not to cut all the way through.
Rotate the zucchini and make another set of diagonal cuts to create a diamond pattern.
Season the Zucchini:
Generously salt the zucchini halves and let sit for at least 10 mins.
Dab off as much of the moisture that has been pulled out of the zucchini as you can.
Brush the scored sides of the zucchini halves with olive oil.
Generously sprinkle Ranch & Rifle's "The A.P." seasoning rub over the scored sides, making sure the seasoning gets into the cuts for maximum flavor.
If desired, add a little extra sea salt and black pepper to taste.
Grill the Zucchini:
Place the zucchini halves on the preheated grill, flesh side down.
Grill for about 4-5 minutes, until the flesh side is nicely charred.
Flip the zucchinis over and grill for an additional 4-5 minutes, or until they are tender but still have a bit of bite. (charring is great indicator at this temperature).
Serve:
Remove the zucchinis from the grill and let them rest for a couple of minutes.
Serve with fresh lemon wedges on the side for a burst of citrus flavor.
Tips:
For added flavor, you can drizzle a bit of balsamic glaze over the grilled zucchini before serving.
