The A.P. : Grilled Zucchini

EQUIPMENT

  • Charcoal Grill

  • Sharp Pearing knife

  • Tongs

INGREDIENTS

  • 4 Medium Zucchinis

  • 2 tbsp Olive Oil

  • 3 tbsp Ranch & Rifle’s The A.P. Seasoning

  • 1 tsp sea salt

  • 3 Fresh Lemon Wedges

INSTRUCTIONS

  • Preheat the Grill:

    • Preheat your grill to medium-high heat (around 425-450°F).

  • Prepare the Zucchini:

    • Wash the zucchinis thoroughly and pat them dry with a clean towel.

    • Slice the zucchinis lengthwise into halves.

  • Score the Zucchini:

    • Take a sharp knife and make diagonal cuts on the flesh side of each zucchini half, about 1/4 inch deep. Be careful not to cut all the way through.

    • Rotate the zucchini and make another set of diagonal cuts to create a diamond pattern.

  • Season the Zucchini:

    • Generously salt the zucchini halves and let sit for at least 10 mins.

    • Dab off as much of the moisture that has been pulled out of the zucchini as you can.

    • Brush the scored sides of the zucchini halves with olive oil.

    • Generously sprinkle Ranch & Rifle's "The A.P." seasoning rub over the scored sides, making sure the seasoning gets into the cuts for maximum flavor.

    • If desired, add a little extra sea salt and black pepper to taste.

  • Grill the Zucchini:

    • Place the zucchini halves on the preheated grill, flesh side down.

    • Grill for about 4-5 minutes, until the flesh side is nicely charred.

    • Flip the zucchinis over and grill for an additional 4-5 minutes, or until they are tender but still have a bit of bite. (charring is great indicator at this temperature).

  • Serve:

    • Remove the zucchinis from the grill and let them rest for a couple of minutes.

    • Serve with fresh lemon wedges on the side for a burst of citrus flavor.

  • Tips:

    • For added flavor, you can drizzle a bit of balsamic glaze over the grilled zucchini before serving.

    • This grilled zucchini pairs well with a variety of grilled meats, making it a perfect side dish for any BBQ.
