Hot Honey - Acorn Squash Ribs

These acorn squash "ribs" are a fun and delicious way to enjoy a classic fall vegetable. When sliced into wedges, acorn squash resembles "ribs," making them easy to pick up and enjoy. Grilling the squash caramelizes its natural sugars, while Ranch & Rifle’s Hot Honey Seasoning adds a perfect blend of sweet and spicy flavors.

Ingredients

  • Acorn Squash: 1 large, halved, seeded, and cut into 1- to 1½-inch thick wedges

  • Olive Oil: 2 tbsp

  • Ranch & Rifle’s Hot Honey Seasoning: 2 tbsp (or to taste)

  • Fresh Parsley: chopped, for garnish (optional)

  • Lemon Wedges: for serving

Instructions

  1. Prepare the Charcoal Grill

    • Light the charcoal and set up the grill for medium-high heat, arranging the coals for indirect grilling (one side with direct heat and the other side cooler for indirect heat).

    • Allow the grill to preheat until the coals are white-hot and evenly spread.

  2. Prepare the Acorn Squash “Ribs”

    • In a large mixing bowl, toss the acorn squash wedges with olive oil, ensuring each wedge is well-coated.

    • Sprinkle Ranch & Rifle’s Hot Honey Seasoning over the wedges, tossing again to coat evenly.

  3. Grill the Squash

    • Place the squash wedges on the grill over direct heat. Grill each side for 7-8 minutes, allowing nice grill marks to form.

    • Move the wedges to the indirect heat side, close the grill lid, and cook for an additional 10-15 minutes, or until the squash is tender but still holds its shape. Use a fork to test for doneness.

  4. Serve and Garnish

    • Remove the squash from the grill and arrange on a serving platter.

    • Garnish with fresh parsley, if desired, and serve with lime or lemon wedges for a bright finishing touch.

  5. Enjoy

    • Serve warm as a sweet, spicy, and smoky side dish. These “ribs” make a perfect snack or appetizer for any grilling gathering.

Tips

  • Uniform Slices: Try to cut the squash into evenly sized wedges for even cooking.

  • Additional Flavor: Drizzle a little local honey over the squash before serving to enhance the caramelized sweetness.

These acorn squash "ribs" with Hot Honey Seasoning offer a perfect mix of spicy-sweet flavors, with a satisfying smoky char from the grill!
