Flammkuchen, also known as "German pizza," is a thin, crispy flatbread traditionally topped with crème fraîche, onions, and bacon. This easy recipe uses premade flatbread for a quick version that delivers the classic flavors with the added smokiness of a pellet grill.
Ingredients
Premade Flatbread: 2 pieces (or more, depending on serving size)
Crème Fraîche or Sour Cream: ½ cup
Olive Oil: 1 tbsp
Onion: 1 small, thinly sliced (preferably yellow or sweet)
Bacon: 2-3 slices, chopped
Salt and Pepper: to taste
Fresh Thyme or Chives: chopped, for garnish (optional)
Instructions
Preheat the Pellet Grill
Set your pellet grill to 400°F and let it preheat for about 10-15 minutes with the lid closed. Using wood pellets like apple or cherry will add a nice, mild smokiness that complements the Flammkuchen.
Prepare the Toppings
In a skillet over medium heat, cook the chopped bacon until it’s just starting to crisp. Remove and drain on a paper towel-lined plate. You want it to be slightly undercooked as it will finish cooking on the grill.
If desired, lightly sauté the sliced onions in the remaining bacon grease until they’re just softened, about 3-4 minutes.
Assemble the Flammkuchen
Place the premade flatbreads on a baking sheet or pizza peel for easy transfer to the grill.
Spread a thin layer of crème fraîche or sour cream evenly over each flatbread.
Scatter the sautéed onions and cooked bacon over the crème fraîche. Season lightly with salt and pepper to taste.
Grill the Flammkuchen
Place the flatbreads directly on the pellet grill grates.
Close the lid and cook for 10-12 minutes, or until the flatbread is crisp and the toppings are slightly browned. Check occasionally to ensure the bottom doesn’t burn.
Finish and Serve
Remove the Flammkuchen from the grill and allow it to cool for a minute.
Garnish with fresh thyme or chives if desired, then cut into slices.
