Leftover Turkey Broth

Got leftover Thanksgiving turkey? Don’t toss that carcass just yet! Making a homemade turkey broth is a great way to squeeze every bit of flavor out of your bird. This country-style turkey broth is rich, cozy, and perfect for soups, stews, or sipping on its own.

Ingredients

  • Leftover turkey carcass (bones, skin, and any bits of meat left on)

  • 2-3 carrots, roughly chopped

  • 2-3 celery stalks, roughly chopped

  • 1 large onion, quartered (you don’t even need to peel it)

  • 4-5 garlic cloves, smashed (no need to peel)

  • 2-3 sprigs fresh thyme (or 1 tsp dried thyme)

  • 2-3 sprigs fresh parsley

  • 1-2 bay leaves

  • Salt and black pepper, to taste

  • 8-10 cups water (enough to cover the turkey carcass)

Instructions

  1. Prepare the turkey carcass: Break the turkey carcass into a few large pieces if needed so it fits into your pot.

  2. Fill the pot: Place the carcass, carrots, celery, onion, garlic, thyme, parsley, bay leaves, and a sprinkle of salt and pepper into a large stockpot or Dutch oven.

  3. Add water: Pour in enough water to cover everything by about an inch. (You can add more later if needed.)

  4. Bring to a simmer: Bring the pot to a boil over medium-high heat, then reduce to a gentle simmer. Skim off any foam or scum that rises to the top with a spoon.

  5. Simmer low and slow: Let the broth simmer for AT LEAST 4 hours, uncovered, for a rich, flavorful broth. Check every hour and add a little water if needed to keep the carcass covered.

  6. Strain the broth: Once broth has reached desired richness. Carefully remove the large bones and veggies with tongs, then pour the broth through a fine-mesh strainer into another pot or large bowl.

  7. Season and store: Taste the broth and add more salt if needed. Let it cool, then pour it into jars or containers. It’ll keep in the fridge for up to a week, or freeze it for up to 3 months.

Tips

  • For a darker, richer broth: Roast the bones, carrots, and onions at 400°F for 30 minutes before adding to the pot.

  • Add extra flavor: Throw in leftover herbs like rosemary, sage, or a few peppercorns.

This country-style turkey broth is a fantastic base for soups and gravies, or just sip it hot in a mug for a cozy treat.
