Sumi Salad

INGREDIENTS

  • 1 head of cabbage

  • 3 springs of green onion

  • 1/2 rotisserie chicken

  • 1 packet of sliced almonds

  • 2 packages of ramen noodles

  • Sesame seeds

    Dressing:

  • ¼ cup canola oil

  • ¼ cup white wine vinegar

  • ¼ cup sugar

  • Salt and Pepper to taste

INSTRUCTIONS

  • Start by chopping up the cabbage, have them about medium size pieces/bite size then place in a large bowl. Slice up the green onions and place them into the bowl. Shred up your chicken (this can be boiled as well, I just prefer the ease of rotisserie) place into the bowl.

  • Over medium heat, roast up the package of sliced almonds until they’re a nice golden brown then place into the bowl.

  • Break apart the ramen noodles in their package (leave some larger pieces) and you guessed it, place into the bowl.

  • In a large measure cup, you are going to combine all of the dressing ingredients. These may need to be tweaked a little as you go but you are looking for it to taste a little tart and do not skimp on the salt and pepper.

  • Once you get your desired flavor, drizzle over the top and mix everything up. Place into the fridge for about 2 hours, then enjoy!
