Roasting Whole Garlic
Roasting garlic on the grill is easy and adds a delicious, smoky depth to the cloves. Here's a simple recipe to get perfectly roasted garlic every time:
Ingredients:
1-2 whole garlic bulbs
1-2 tbsp olive oil
Salt (optional)
Freshly ground black pepper (optional)
Aluminum foil
Instructions:
Preheat the Grill: Set your grill to medium heat, around 375°F to 400°F (190°C to 200°C). If using a charcoal grill, wait until the coals have turned gray and there are no large flames.
Prepare the Garlic: Peel away the loose outer layers of the garlic bulb, leaving the cloves still attached and the skins intact. Trim about 1/4 inch off the top of each bulb to expose the tops of the cloves.
Season the Garlic: Place each garlic bulb on a piece of aluminum foil large enough to wrap it up. Drizzle about 1/2 to 1 tablespoon of olive oil over each bulb, letting it seep into the exposed cloves. Sprinkle with a little salt and pepper if desired.
Wrap the Garlic: Wrap each bulb tightly in the foil to make a sealed packet.
Grill the Garlic: Place the foil packets on the grill over indirect heat. Close the grill lid and roast for about 45 minutes, checking after 30 minutes. The garlic is done when the cloves are soft, golden brown, and spreadable.
Serve: Carefully remove the packets from the grill and let them cool slightly before unwrapping. Gently squeeze the base of each clove to push the roasted garlic out. Use it as a spread on bread, mix into sauces, or blend into mashed potatoes.
