Ingredients

  • 12 fresh oysters

  • 2 tablespoons finely minced fresh shallots

  • 2 tablespoons red wine vinegar

  • 2 tablespoons white wine vinegar

  • 1/2 teaspoon coarsely cracked black pepper

  • Crushed ice (for serving)

Instructions

  1. Make the Mignonette: In a small bowl, mix the minced shallots, red wine vinegar, white wine vinegar, and cracked black pepper. Let it sit for at least 15–30 minutes before serving to allow the flavors to meld.

  2. Shuck the Oysters: Use a proper oyster knife and work carefully. Twist at the hinge and run the blade under the shell to separate the oyster. Keep as much of the briny liquor in the shell as possible. Place shucked oysters on a bed of crushed ice to keep them chilled.
