Foil Packet Dinners: Sausage & Potato

A foil pack dinner is perfect for the great outdoors – simple, delicious, and no cleanup! This recipe combines hearty veggies and savory sausage, seasoned to perfection and cooked right over the campfire. Customize it however you like Just wrap, cook, and enjoy!

Ingredients (per foil pack)

  • 1 smoked sausage or bratwurst, sliced

  • 1 medium potato, diced small

  • ½ small onion, diced

  • ½ bell pepper, diced (any color)

  • 1-2 tbsp olive oil or melted butter

  • 1 1/2 tbsp Garlic powder

  • 1 tbsp Paprika

  • 1 tbsp Italian seasoning

  • Salt and black pepper, to taste

  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Prepare the foil: Tear off a large sheet of heavy-duty aluminum foil (about 12 x 18 inches). You can double-layer the foil if your campfire is extra hot.

  2. Assemble the ingredients: In the center of the foil, layer the potatoes, onion, and bell pepper. Add the sausage on top.

  3. Season and add oil: Drizzle with olive oil or melted butter, then season with salt, pepper, and any other spices you like.

  4. Seal the pack: Fold the foil over the ingredients and seal all the edges tightly by folding them together. Leave a bit of room inside the pack for steam to circulate.

  5. Cook over the campfire: Place the foil pack on hot coals (not direct flames) or on a campfire grate. Cook for 20-25 minutes, flipping halfway through, until the potatoes are tender and everything is cooked through. Carefully open to check for doneness.

  6. Serve and enjoy: Let the foil pack cool slightly, then open it up. Sprinkle with fresh parsley if you like, and enjoy right out of the pack!

Tips

  • For more flavor: Add a splash of BBQ sauce OR a sprinkle of parmesan cheese before sealing.

  • Mix it up: Try swapping in other veggies like cherry tomatoes, mushrooms, or green beans.
